As we wandered Bordeaux we ran into this fellow making canelés. A canelé is a fluted cake filled with a rum and vanilla interior and enclosed by a thin caramelized shell. They are tasty though as with many things their quality varies. The ones in Bordeaux, the ones being made in this photo, were the best we tried.
